Summer Pasta Salad
This Summer Pasta Salad is perfect for the 4th of July. You really can’t have a cookout without a good pasta salad and this one is to die for. It is quick, simple and easy to alter to your liking. You want more dressing? Shake it on. You Like more arugula? Toss in an extra handful. I love recipes that are easy to manipulate to your liking. It is also easy to play around with the spices for this dish.
Ingredients:
- Pasta (I used penne but you can use whatever kind you want)
- Arugula (2 cups)
- balsamic vineger
- Garlic salt (to taste)
- Dried Parsley (2 tbsp)
- Cherry tomatoes (2 pints)
- Olive Oil (2tbsp)
- Salt and pepper to taste
- Feta cheese (optional to sprinkle on the later)

- 1/3 cup balsamic vinger You can always add more later
- 2 tbsp Garlic Salt
- 2 cups arugula
- 2 pints Cherry tomatoes cut into 4ths
- to taste salt and pepper

Cook pasta al dente.

Drain pasta and put in large mixing bowl. Add in olive oil.

Add feta cheese to taste if you want.
